Like the Maori and Moriori fishers before us, our livelihood depends on the gentle coexistence with the marine ecosystem around the coast of New Zealand.  We work closely with our fishers to modulate the quantities of crayfish that are brought in so as to match what customers have said they need against the known capacity of fishermen and availability of lobster stocks.  And we use deep analytics of lobster health and handling to share best practices between our export plants and the fishers we partner with around New Zealand.
